This will mean carefully choosing an IT company who has existed long enough to build up a good reputation and a knowledge bank. They will also be sized so that they are large enough to give reasonable response times yet not no large that you are a small fish to them.

Make sure that they have a training ethos for their staff and that they are happy to work alongside your own IT team if required. This way you can have the best of both worlds by making a composite IT team with holidays and training covered by the 3rd party yet having the speed of an internal team.
